For Making Paneer Makhani
1. Butter – 2tbsp
2. Jeerakam/Jeera – ½ tsp
3. Onion – 1medium sized
4. Tomato – 3medium sized
5. Ginger, Garlic – 1inch, 4-6cloves
6. Kashmiri Red Chilli – 3nos
7. Cashew Nuts – 10-15nos
8. Red Chilli Powder – 1 tbsp
9. Turmeric Powder – ½ tsp
10. Garam Masala – ½ tbsp
11. Salt & Sugar – To taste, 1tbsp
12. Hot water – A little for Cooking
13. Curd – 1/2cup
14. Fresh Cream – 2tbsp

For Making Biryani Rice
1. Basmati Rice – 2cups
2. Water – 6cups(For 1cup rice=2cups waterFirst wash and Soak Basmati Rice for 30minutes. In this 30minutes time you can prepare Paneer Makhani.

For Making Biryani Rice
1. Basmati Rice – 2cups
2. Water – 6cups(For 1cup rice=2cups water)
3. Ghee – 1tbsp
4. Salt – To taste, Must be bit forward
5. Whole Spices (Bayleaf, Cardomom, Star anise, Cinnamon stick,Cloves, Javitri, Fennel seeds)
For Dum Process
1. Bista(Fried Onions & Roasted Cashew,raisins mixture)
2. Biryani Masala
3. CorianderCoriander Leaves , Mint Leaves
4. Yellow Food Colour or Turmeric Powder Mixed water
Instructions
1. In a pan add butter, then add the other ingredients mentioned above(1-11)with little Hot water. Mix well,Close and cook in medium flame upto 5-6minutes. Then keep it aside to cool down.
2. When the mixture is cooled, Grind this mixture into a fine puree using a blender.
3. In a medium flame,Pour this fine puree to a pan, Add Curd, Fresh Cream and fried onions. Mix well for 1minute in a medium flame, then switch off the flame and Add Paneer Cubes. Mix Them gently with the puree. Keep it aside
Now our Paneer Makhani is Ready
4. Now to prepare Biryani Rice, Boil water in a Large pot with salt and ghee. When it starts to boil add soaked basmati rice. Then add whole spices. Give a mix and let it cook upto 80percent.
5. Now for Dum Process – Place a tawa and on top of that keep the Biryani Pot. First layer the base with half of Prepared Paneer Makhani. When you feel the rice has cooked,Drain and transfer half of the hot cooked basmati rice on top of paneer makhani.
6. Spread some bista on top. Again layer it with the remaining paneer makhani. Then again put and cover it with the remaining rice.
Add some Biryani Masala, then remaining bista, coriander, mint leaves, Ghee. Pour a little Yellow Colour mixed water.
7. Cover it with a Banana Leaf. Close with the lid and place a weight on top. Now switch ON the flame and Cook for 10-12minutes in LOW flame.
Now our PANEER MAKHANI Dum Biryanii is Ready
