Mangalore Bonda/Goli Bajii & Railway Chutney

 

Ingredients for Mangalore Bonda 

1.  Maida–2cup 
2.  Curd–1cup 
3.  Asafoetida–¼ tsp 
4.  Chopped Curry Leaves–1 or 2strings 
5.  Ginger 
6.  Green Chillies - 2 
7.  Peppercorns–a little 
8.  Cumin Seeds/Jeera– 1/2tsp 
9.  Baking Soda–a pinch 
10.  Salt – To taste  

Ingredients For Railway Chutney 

1.  Pottukadala/Roasted Gram Daal–1cup 
2.  Grated Coconut –1tbsp 
3.  Green Chillies - must add little bit higher as per taste
4.  Garlic & Ginger 
5.  Chopped Coriander leaves 
6.  Tamarind Piece–Small piece 
7.  Salt–To taste  

Instructions 

1.  In a bowl Mix all the ingredients for Mangalore Bonda and form a batter. Beat the batter for 4-5minutes well and keep it aside for 15 minutes.
2.  During this 15mins resting time we can prepare Railway Chutney, so for that In a blender add all the ingredients mentioned above for railway chutney Grind them to a fine paste. Move it to a vessel and add little water. Mix and make a semi thick cconsistency chutney.
3.  Now for seasoning , in hot oil add mustard,when it splutters add shallots Curry leaves,RedChilies. Roast and add it to the prepared Chutney. Mix it and Our Railway Chutney is ready.
4.  Now pour oil in a hot pan in medium flame for making Bonda. Take the batter bowl, dip your hand in water and take a portion of batter as small balls,Put into hot oil gently one by one.Stir occasionally 

5.  Lower the Flame and when the bubbles in oil reduces and when it turns into slight golden Colour,carry them out to a strainer. Now our Mangalore Bonda is ready. Serve Hot with railway chutney
