Sweet Puffed Rice Balls/ PoriUnda


 

Ingredients 


1.  Puffed Rice – 3or4 cups 
2.  Jaggery Syrup – ½ Cup grated jaggery + ¼ cup water 
3.  Cardomom Powder – ½ tsp 
4.  Dry Ginger Powder(Chukku Podi) – 1pinch (optional) 
5.  Ghee/Oil – To apply on hands 

Instructions 


1.  First, fry the puffed rice in a pan for 2minutes on a low flame.And keep it aside

2.  Heat a pan and add grated jaggery with water.When the jaggery gets diluted switch off the flame.Strain the impurities and put it back on stove and let the syrup bubble up and reaches a string consistency.

3.  For checking the syrup consistency add a drop or spoon of jaggery syrup in cold water ,gather the syrup to make a firm ball with your fingers.If you are able to form a nice ball then the right consistency is achieved.

4.  Add the cardamom powder and dry ginger powder into the syrup and mix

5.  Now pour the jaggery syrup little by little on top of the puffed rice and mix well. Its seen that when puffed rice is added into the syrup the rice is getting reduced in size due to high heat.

6.  After 1minute of rest when the hotness gets slightly reduced apply some ghee or oil on hands and roll out in palms. Make shapes in balls without breaking the puffed rice

7.  Now store in air tight containers or serve just like that.
