Dindigul Mutton Biriyani/ Thalappakatti Mutton Biriyani



Ingredients 

1.  Mutton – 1kg
2.  Water – 1 ½ cups
3.  Oil – 3Tbsp (sunflower oil)
4.  Ghee – 2Tbsp
5.  Turmeric Powder – ½ Tsp
6.  Chilli Powder – 1 Tbsp
7.  Salt – 2 Tsp
8.  Lemon Juice – 1lemon
9.  Curd – 200 gms
10.  Mint and Coriander Leaves
11.  Jeerakasala / Seeraga Samba Rice – 2cups
12.  Banana Leaf to cover



To Make Masala Powder 

1.  Coriander Seeds – 2 Tbsp
2.  Cashew Nuts – 10nos
3.  Cumin Seeds – 1Tbsp
4.  Cardomom – 6nos
5.  Pepper – 1 Tbsp
6.  Bay Leaf – 2nos
7.  Star Anise – 2nos
8.  Cinnamon
9.  Mace
10.  Clove – 10nos
11.  Fennel Seeds – 1Tbsp

To Make Masala Paste 

1.  Shallots – 15nos
2.  Green Chilli – 5nos
3.  Garlic – 5cloves
4.  Ginger

Instructions 


1.  Wash and soak the rice for about 30mins.

2.  Make masala powder by grinding with above said ingredients in "To Make Masala Powder". Grind them into fine powder form


3.  Make Masala Paste by grinding with above said ingredients in "To Make Masala Paste". Grind them into a fine paste


3.  Cook the mutton pieces by adding water and little salt using a pressure cooker. Cook until 4 or 5 whistles. Keep it aside . Keep the cooked peices and mutton stock seperately


4.  Take a large cooking or biryani pot. To that add oil and ghee. Now add the prepared masala paste. Saute it it turns into slight brown. Add the prepared masala powder and saute


5.  Now add turmeric powder,Red Chilli powder and salt. Keep the flame LOW .Saute and put the cooked mutton pieces.


6.  Now add the juice of lemon and curd. Mix well and add mint and coriander leaves. Add all the mutton stock.Close the pot with a lid on a medium flame and cook for about 15 minutes


7.  After 15minutes open the lid and add the soaked Jeerakasala/Seeraga Samba rice. Add 2cups of hot water.Check for the salt taste. Close and cook for about 8minutes on a medium flame.When rice is half cooked remove the pot from the flame.


8.  Now place a tawa on the flame . When the tawa gets heated place the biryani pot on top. Open the lid give a slight mix from sides and pour ghee ,place and cover the biryani with a banana leaf. Close the pot with the lid firmly. (You can also cover the lid with a foil paper and close with the lid). Keep the flame on LOW and Dum cook the biryani for about 10-15minutes.


9.  Now our Tasty Dindigul Mutton Biryani is ready to serve!!!!
