Ari Murukku / Rice Chakli



Ingredients 

1. Roasted Rice Flour – 2cups (1cup 250ml)
2. Cumin Seed – ½ tsp
3. Black sesame seed – 1tsp
4. Red chilli Powder – 1tsp
5. Asafoetida powder – 1 or 2 pinch
6. Salt as taste
7. Urad Dal – ½ cup
8. Buttter Melted or Ghee– 2tbsp
9. Water

Instructions

1. First wash and clean the Urad Dal. Rinse it and roast it using a fry pan until it turns a slight golden colour. After that allow it to cool and grind it using a mixer into fine powder. Or you can also steam the urad dal and grind it using a mixer to a fine paste. Keep it aside.



2.  Take a big bowl add roasted Rice flour,Cumin seed,Sesame seed,Red chilli powder,Asafoetida powder and the above prepared urad dal powder. Add ome salt as to taste. Mix well and add ghee or butter.


3. By using your hands mix well and add warm water slowly little by little. Knead and Make a soft and firm dough. Knead the dough well

4. Take the idiyappam press and a star nozzle, grease well with ghee .Fill the press with the dough and close tightly


5. Trial to make a murukku. If the dough contiously coming nicely without breaking its a well moist dough to make murukku. If they are breaking add little more water and knead it again. If its too soft you wont get the murukku shape then add little more rice flour.


6. Heat the oil for frying. When the oil is ready directly make spirals in it. Fry both sides on medium heat.
OR 
Make some spirals on a wax paper. Paste the ends. When the oils gets boiled gently drop the spirals.


7. The bubbles stops when its perfectly fried. Now remove it into a strainer or a tissue paper.

8. Now our evening snack Murukku is ready.
