Chicken Dum Biryani Malabar Style



Ingredients 

A Short video on GHEE RICE PREPARATION 




For Chicken Marination 

 
1. Chicken with Bone – 1kg
2. Salt – as to taste
3. Lemon Juice – 2tsp
4. Turmeric Powder – ¼ tsp
5. Kashmiri red Chilli Powder – 1tsp

FOR BIRYANI MASALA 


Grind this spices
 
1. Fennel Seed – 1tsp
2. Poppy Seed /KusKus– 1tsp
3. Cinnamon Stick/Karukapetta – a large stick
4. Cloves/Grambu – ½ tsp
5. Mace/JathiPathri– 1flower
6. Star Anise/Thakolam – 1Nos

FOR CHICKEN MASALA 


1. Oil/Ghee – 3tbsp
2. Red onion – 2medium size
3. Ginger and garlic – 4tbsp,crushed
4. Green Chilli – 6small size
5. Turmeric powder – ¼ tsp
6. Cumin Powder – ¼ tsp
7. Kashmiri Chilli Powder – 2tsp
8. Tomato – 1large
9. Yogurt/Curd – ¼ cup
10. Salt – as to taste
11. Coriander Leaves – ½ cup
12. Mint Leaves- ¼ cup
13. Coconut Milk – 1/4Cup

RICE/GHEE RICE PREPARATION 


1. Jeerakasala Rice
2. Rose Water – 2tsp
3. Ghee – 3tbsp
4. Fennel Seed – ½ tsp
5. Pepper Corn – ½ tsp
6. Cardamom – 8nos
7. Star Anise – 1nos
8. Mace – ½ piece
9. Cinnamon Stick – a small piece
10. Curry Leaves – a string
11. Small Onion – ¼ cup

Instructions 


For Chicken Marination - 


1.  Add Salt, Lemon Juice, Turmeric Powder , red chilli powder to the chicken and marinate well and set side for 15minutes.

For Chicken Masala - 


2.  Add 2 tbsp Oil/Ghee in a pan and add onions and sauté for around 1minute

3.  Add Ginger Garlic paste and green chilli to it , Add salt and Saute till the onions turn to a light brown colour. As in Malabar green chilli is used more instead of chilli powder

4.  Add Turmeric powder,Cumin Powder,2tsp Chilli Powder and sauté for few minutes

5.  When raw smell goes,add marinated chicken and mix well.

6.  Add tomatoes and yogurt and mix well and cook for few minutes

7.  Cook till water oozes out of the chicken and then add salt as to taste,Coriander leaves,  Mint leaves , Ground BIRYANI MASALA, 1 tbsp ghee

8.  Combine well and cover and cook on a low to medium flame.


9.  When the chicken gets cooked well add coconut milk. Mix and cover it with lid and cook for 5 minutes and set aside


10.  The gravy should be semi thick. Now our Chicken Masala is ready


Rice Preparation(Ghee Rice) 


For this recipe, we need Jeerakasala rice also known as Kaima rice.

1.  Add ghee,fennel seed,pepper corn,cardamom,Star anise,mace,Cinamon stick,Curry Leaves,Small onion. Saute for few seconds and add the washed and soaked Jeerakasala Rice/ Kaima Rice to it


2.  Mix well. Saute for some time until you hear a sound of rise geting roasted.Donot roast the rice for longer time. Dont make the rice to turn its colour to brown

3.  Add Hot water, For 1cup of rice add 2cups of hot water. Mix and add 2tsp of rose water,salt as per taste. Stir well and cover it with a foil paper and cook until its done


5.  Now our rice is cooked and set it aside

For Garnishing  – Fry Raisins 1tbsp, Cashew and onions in 1tbsp ghee. When turns brown set it aside


Dum Process 


1.  Add a layer of chicken masala in a heavy bottomed pot


2.  Add ghee rice on top of it and followed by onions cashew raisins coriander and mint leaves


3.  Pour a little turmeric mixed water


4.  You can seal with an aluminium foil paper and cover the lid Heat a iron skillet on high heat for few minutes Place the pot on this iron skillet. If you use cooker place the cooker and remove the weight of the cooker. When the top portion of the cooker heats this is the indication for our biryani been cooked.


5.  Cook on low heat for 15 – 20mins. After that switch off the flame and keep for around 5 – 10mins

6.  Now open the lid .Add the fried raisins cashews and onions on top of Chicken Dum Biryani .Now our biryani is ready to serve.





Serve with chutney,Pappad,Pickle,Raita.Enjoy!!!!!!
